Gihei Junmai Ginjo Yamadanishiki is brewed at 50% polish under the Gihei label of the Kaishuichi brewery, one of Japan's smallest sake producers at approximately 60 tsubo, located within a supermarket complex in Aizu Wakamatsu, Fukushima. The brewery relies on locally sourced Fukushima ingredients and produces Gihei as a rare, limited offering.
