Uchigasaki Brewing, founded in 1661 and the oldest brewery in Miyagi Prefecture, named its flagship brand Hoyo after a Chinese legend in which a phoenix singing in sunlight on New Year's Day brings good fortune. Brewing with varieties of rice unique to Miyagi such as Kura no Hana and Gin no Iroha, alongside ultra-soft local water, the house style is delicate, smooth, and balanced. The brewery has been exporting internationally since 2001 and has received recognition at Kura Master in France as well as competitions worldwide.
