Shimizu Seizaburo Shoten was founded in 1869 at the foot of the Suzuka Mountains in Mie Prefecture, where crystal-clear mountain water and rice from the Ise Plain provide ideal conditions for brewing. The name Zaku, written with the character for make or create, embodies the brewery's belief that the true value of sake is co-created with the customer rather than defined solely by the producer. Brewed with hand-made koji and extended fermentation periods, Zaku gained international recognition when it was served to world leaders at the 2016 G7 Summit in Ise-Shima.
