Description

Daiginjo from Okayama using Omachi, the prefecture's heirloom sake rice, polished to 40%. Omachi is grown almost exclusively in the Bizen region of Okayama, celebrated for its full-bodied, complex character; at 40% polish with added brewer's alcohol, the sake takes on an elevated aroma and sharp finish.

一滴の水にも仏の命が宿るという仏教の教えから命名したプレミアムシリーズ。精米歩合40%の酒造好適米山田錦を、低温でゆっくりと醸しました。古来より尊貴の木と言われてきた槐(えんじゅ)のごとく、気高く上品な味わいと、心地よい余韻を持つ純米大吟醸です。山田錦全量使用。

You can see that it was. It has been 150 years since we founded Daikokuya Shimizu Seizaburo Shoten in 1869 (Meiji 2). We are still brewing sake today. In order not to be ashamed of the "Ajishu Suzuka Country" that has been handed down over a long history, it is the destiny of sake brewers in this area to solemnly brew delicious sake.
