Takashimizu is produced by Akita Shurui Seizo, a company formed after World War II through the consolidation of twelve small craft breweries in Akita City, drawing its name from a local hillock famous as a source of natural spring water. Brewed with Akita-grown rice and the area's naturally soft water, the sake is known for mild umami, a clean aroma, and a crisp finish, and the brewery has earned a Gold Medal at the Annual Japan New Sake Awards for fifteen consecutive years.
