Santoka
Kanemitsu Shuzo in Yamaguchi Prefecture inherited the brewery where haiku master Santoka Taneda once worked, and developed the Santoka brand as a poetic tribute to his legacy. Using 100% Yamaguchi Prefecture rice and local water, the brewery produces sake in small batches through slow, low-temperature fermentation, with quality management that earned gold medals at the National New Sake Competition in 2002, 2003, and 2006. The range spans from a clean, slightly dry honjozo to a junmai daiginjo genshu, each carrying the measured, introspective spirit associated with Taneda's verse.
