Santoka Muroka C Daiginjo from Kanemitsu Shuzo in Yamaguchi is an unfiltered daiginjo representing the Type C expression in the brewery's muroka collection, brewed to daiginjo standards with highly polished rice while foregoing charcoal filtration. This approach allows the natural complexity and aromatics of the daiginjo fermentation to remain fully intact in the bottle.
