Kubota Shuzo was founded in 1844 and is located at the foot of the Tanzawa mountain range in Kanagawa Prefecture, drawing on natural spring water from the Tanzawa watershed for every brew. Sagaminada is crafted in the ginjo tradition, keeping the fragrance understated and natural to prioritize the umami of the rice in a well-balanced food sake. The surrounding landscape has changed little since the brewery's founding, with fireflies still appearing in summer.
