Miyashita Shuzo produces Kiwamihijiri in Okayama City, at a brewery founded in 1915 that relocated in 1967 to its current site beside the Asahi River to access superior groundwater drawn from 100 meters below the riverbed. The brand name builds on Miyashita's core label Hijiri, which references the celebrated Man'yoshu verse by Otomo no Tabito praising sake as a holy thing, with Kiwami meaning pinnacle to denote the daiginjo tier. Kiwamihijiri has earned Gold Prize recognition at the National Seishu Kanpyokai, reflecting the influence of Bichu toji master craftsmanship that the brewery has preserved through successive generations.
