Kagatobi
Fukumitsuya, founded in 1625 in Kanazawa, Ishikawa Prefecture, is one of Japan's oldest continuously operating sake breweries and produces only junmai sake, using no added alcohol across its entire range. Kagatobi takes its name from the kagatobi, the Kaga domain fire brigades celebrated in kabuki, and the brand centers on what the brewery calls kire -- a flavor dynamic that builds on the palate and then clears cleanly. Contract-farmed Yamada Nishiki, Kinmon Nishiki, and Gohyakumangoku are used across the lineup, with each variety vinified separately to preserve its individual character.
