Momotose is a long-term aged sake produced by Fukumitsuya, a Kanazawa brewery founded in 1625 that is the city's oldest operating sake producer. Fukumitsuya pioneered long-term sake maturation early on, and Momotose is conceived as a series with expressions intended to peak after 10, 20, and 30 years of aging, opening up pairings with foods that conventional sake cannot match. The brewery draws its water from a source 150 meters underground that takes an estimated 100 years to filter down from the sacred Mount Hakusan, called Hyakunen-sui.
