Fukumitsuya, founded in 1625, is Kanazawa's oldest sake brewery and in 2001 became the first large-scale producer in Japan to convert entirely to junmai sake. Hatsugokoro is its aged junmai daiginjo line, brewed using traditional yamahai starter culture and the brewery's proprietary yeast, then matured in four stages spanning one, three, seven, and ten years under low-temperature 'tanjuku' cellaring. The brand name reflects the brewer's intention that each bottle mark a moment of personal renewal.
