Fukumitsuya, the oldest brewery in Kanazawa with roots stretching back centuries in Ishikawa Prefecture, established Mizuho as its highest-tier brand — a line composed exclusively of junmai daiginjo produced from specially selected Yamada Nishiki. Each batch is taken only from the center-run of the press (nakakumi kakoi), then aged slowly under low temperature in a method proprietary to the brewery. The brand name invokes Toyoashihara Mizuho no Kuni, the ancient Japanese poetic name for a land of abundant, sacred rice.
