Hokusetsu

Hokusetsu Sake Brewery was founded in 1872 on Sado Island in Niigata Prefecture, where the combination of island-grown rice, soft mountain water, and a climate shaped by the Sea of Japan has guided more than 150 years of brewing. The brewery's sake is served at Nobu restaurants in New York, Los Angeles, London, Milan, and Dubai, bringing Sado's terroir to some of the world's most celebrated dining destinations. Hokusetsu is also known for a distinctive practice of maturing sake in a special room where ultrasonic waves, believed to replicate the effect of music, are said to accelerate and refine the aging process.
