井出釀造店

山梨縣
井出釀造店的前身是江戶時代中期(約1700年)創立的醬油釀造業,至江戶末期(約1850年),第十六代彌兵衛著眼於海拔850米的涼爽氣候與豐沛的富士山泉水,轉型投身日本酒釀造,一脈傳承至今已歷二十一代。富士山素以無河流著稱,冬雪融化後滲入熔岩層,歷經數十年方才從山麓北側湧出。「甲斐開運」正是釀造師在嚴寒之中,以穿透天然熔岩層過濾而成的泉水精心釀製而成。
