井出釀造店的前身是江戶時代中期（約1700年）創立的醬油釀造業，至江戶末期（約1850年），第十六代彌兵衛著眼於海拔850米的涼爽氣候與豐沛的富士山泉水，轉型投身日本酒釀造，一脈傳承至今已歷二十一代。富士山素以無河流著稱，冬雪融化後滲入熔岩層，歷經數十年方才從山麓北側湧出。「甲斐開運」正是釀造師在嚴寒之中，以穿透天然熔岩層過濾而成的泉水精心釀製而成。

沿革
- 1700年頃The 11th-generation Yogoemon Ide began brewing soy sauce.
- 1850年頃The 16th-generation Yogoemon Ide, drawing on the cool climate at 850m elevation and clear Mt. Fuji spring water, began brewing sake and named it "Kaiun".
- 1985年"Kai no Kaiun" was adopted as the official brand name.
- 1995年Began the annual New Year brewery-opening event.
- 1995年Began producing liqueurs.
- 2010年4月Began offering brewery tours.
- 2019年12月Began producing "Hokuroku Sparkling," a bottle-fermented sparkling sake.
- 2020年7月Established the Fuji-Hokuroku Distillery and began whisky production.
