The flagship tokubetsu honjozo of the Notaka line, brewed with Gohyakumangoku rice at 55% polish in Joetsu, Niigata. Echigo toji mastery and soft local water produce the lean, dry, food-friendly character that has made Notaka a trusted regional name since 1643.
