Takakiya Karakuchi Honjozo is a dry-profile honjozo from Hamashima Shuzo, made with a small addition of distilled alcohol that sharpens the sake's finish and reinforces its clean, crisp character. The brewery's Bungo-Ono location in Oita puts it within a landscape of clear mountain rivers, and the cold winters that favor clean fermentation align well with the karakuchi (dry) style. This is an everyday table sake that reflects the brewery's post-1997 philosophy of making honest, food-compatible sake.
