石川縣
白藤酒造位於突入日本海的能登半島頂端、石川縣輪島市,地處日本首個被認定為全球重要農業遺產的能登地區,這裡傳承著豐富的飲食文化與傳統技藝。酒造於18世紀初以批發商身份創業,自江戶末期(19世紀中葉)開始釀酒,2006釀造年度起由在能登杜氏處學習過的第九代夫婦主導釀造,出產高品質清酒。2007年能登半島地震造成酒倉嚴重受損,同年部分重建,以小批量、本地扁柏和杉木打造新倉重新出發,2017年因其清酒被選入全日空(ANA)國際頭等艙而享有盛譽。
