Description
Gohyakumangoku polished to 50% forms the base of this daiginjo namachozoshu, which is stored unpasteurized before a single heat treatment at bottling. Cold storage over time allows the sake to develop a layered, mellow quality while retaining the clean fragrance characteristic of Niigata's representative sake rice.
