Notojosen Honjozo Hatsuzakura uses Ishikawamon rice polished to 65%, brewed by Sakurada Sake Brewery in Suzu, Noto. Made by a Noto Toji tradition brewery, this honjozo has a neutral sweetness-dryness balance and is the brewery's best-selling product, consumed almost entirely within Suzu City.
