
Description
This hizoshu variant of the daiginjo is cellared after pressing, allowing extended maturation to layer complexity onto the 40%-polished Koshi Tanrei base. The added aging integrates the aroma and softens the palate, creating a fuller, more contemplative version of the brewery's daiginjo.
