A nakadori (middle-cut) unfiltered raw junmai from this Wakayama brewery, brewed with Gohyakumangoku rice polished to 60% and fermented slowly at a maximum temperature of 10 degrees Celsius. The middle-cut pressing produces a particularly clean, fruit-forward profile with fresh umami and minimal off-notes.
