春季壓榨的新酒經火入後,在炎熱的夏季於涼爽的酒藏中靜置保存。進入秋季,新酒的澀味消退,經過適度熟成後變得圓潤柔和。在酒藏內外溫度趨於一致的秋季,將酒從大桶移至小桶裝瓶,這一工序便稱為「冷卸」。熟成帶來的醇厚與柔和口感,與秋季美食相得益彰。建議冷飲或微溫熱後享用。
