奧飛驒酒造位於岐阜縣中央的下呂市金山町,自享保5年(1720年)起經營酒舖,迄今已逾300年。酒造使用清流飛驒川與益田川匯流處獨特的純淨地下水釀酒,旗下有創業品牌「初白」及由尾張藩主命名、寓意「水綠環繞之地」的「奧飛驒」。杜氏後藤勝信堅持使用當地酒米「飛驒ほまれ」等精選原料,採用木蓋麴等傳統手工工法,多次榮獲各類大獎。
