Polished to 40%, this daiginjo from Nakawashoten in Tokushima is crafted along the Yoshino River, which provides exceptionally pure water for brewing. Extended low-temperature fermentation at the daiginjo level draws out a refined, elegant aromatic expression from highly polished rice.
