Brewed from naturally cultivated rice polished to 78%, this junmai genshu (undiluted) is bottled after a single pasteurization pass, preserving concentrated rice character. The brewery deliberately retains more of the rice grain to honor the flavor held within it, resulting in a dense, dry profile with a clean finish.
