Daiginjo Kasen uses Hyogo-grown Yamada Nishiki and Saka Nishiki, both polished to 40%, from Sekishu Shuzo in Shimane. Saka Nishiki is a Shimane-native sake rice developed specifically for the region's brewing water, complementing the premium Yamada Nishiki in this daiginjo blend.
