2018年新產地資源循環酒,一瓶共享能登風土孕育的饋贈。能登的農業、畜牧業與製造業相互聯動,循環利用各產業產生的資源,釀造出與能登牛相配的清酒。畜牧業將米糠堆肥化,釀酒業則將精米後的米糠用作牛的飼料。以食用米「信州夢瑞穗」100%釀製,採用生酛方式釀造。為保持米的風味與新鮮度,在冰溫冷藏庫中緩慢熟成。為與能登牛豐富的風味相輔相成,特意突出酸味,呈現出清新而醇厚的口感。
