新政酒造
秋田縣
新政酒造堅持「僅使用秋田縣產酒米、以純米釀造」的方針,全程採用1930年分離的「協會六號酵母」及天然乳酸菌釀造,不添加任何釀造酒精。酒造還積極推行以杉板竹箍箍緊的「木桶」釀造,利用木桶天然材質中殘留的微生物,發揮生命活動的釀造工藝。此外,酒造在秋田市東部山區開闢無農藥、無化學肥料的酒米田,探索自然生態系統、農業與釀造之間的有機聯繫,持續追求清酒的本真風味。
