
Akabu New Born is bottled directly from the fermentation tank without pasteurization, capturing the sake's most unguarded, vivid character before time or heat can alter it. Brewed at Akabu Shuzo in Iwate, a brewery rebuilt after the 2011 Great East Japan Earthquake with a fierce commitment to a new generation of sake drinkers, it uses Ginginga, Iwate's prized sake rice, polished to 60%. The nose unfolds naturally with pear, apple, honeydew melon, and plum. On the palate it is smooth and rounded with lychee, blueberry, and grape notes building toward a clean, quietly lingering finish.
