Chapter One of the 59 Takachiyo series uses Ipponjime, a rare Niigata sake rice that few breweries still cultivate. Polished to 59% with the flat-polishing technique and fermented with Association Yeast 1801, it has green apple and white grape aromas with a clean, daiginjo-grade clarity and a gently sweet, dry finish.
