Founded in 1864 in Monzen-machi, Wajima, on the Noto Peninsula of Ishikawa Prefecture, Nakanoshuzo draws its brewing water from a spring near one of Japan's top 100 famous waters, channeling it directly to the cellar. The brewery produces a small output of around 50 koku with the aim of crafting full-bodied, satisfying sake in the rugged style of the Noto region.
