Kanemasu

Kanemasu Shuzo traces its origins to 1822, when Yoshinosuke Takahashi founded a sake shop in Niigata City before relocating to Shibata in 1919, choosing the site for its clean water from the Kaiji River fed by the Iide mountain range and its proximity to prime rice fields. The brewery name itself embeds a principle of precise, honest measurement — measure by gold, measure by the box — which extends to its philosophy of small-batch, terroir-focused production under the concept of a sake Domaine. Kanemasu positions its sake as the quiet accompaniment to a meal rather than the focal point, prizing balance, expansive umami, and clean finish over assertive character.
