Ittekisenryo, whose name translates as a single drop worth a thousand ryo, is produced by Akita Kenhaokko Kogyo (Akita Prefecture Fermentation Industries), a brewery that is part of the Oenon Group. The brand draws exclusively on Akita's own resources, using the prefecture's branded sake rice Akita Sake Komachi, natural Akita spring water, and Akita's AKITA Snow Country yeast (UT-1), making it an all-Akita expression in every ingredient. One distinctive product in the lineup is an edition aged in Akita cedar barrels over 100 years old, giving the sake a clean, woodsy fragrance unique to the region.
