Goretsu Tominaga Shuzoten was established in 1830 in Hitachiota, Ibaraki Prefecture, and has long held to the principle that sake is best when it is dry. The brewery draws on hard well water from its own grounds, which forms the backbone of Goretsu's distinctively crisp, assertive style. Alongside its sake, the brewery also produces local shochu using ingredients such as Hitachi Akisoba buckwheat, reflecting its deep roots in the northern Ibaraki region.
