Kotobuki Shuzo, founded in 1822 in Takatsuki, Osaka Prefecture, operates in a district once celebrated as Settsu Tonda-go, considered one of Japan's oldest distinguished sake-producing areas before Fushimi and Nada rose to prominence. The Ayamesake series represents the brewery's premium tier, with the daiginjo expressions crafted from highly polished Hyogo Yamada Nishiki rice to achieve elegant aroma and refined rice flavor. Alongside Ayamesake, the brewery's flagship Kuninocho brand continues the long Osaka tradition of sake suited to the city's cuisine-centered drinking culture.
