Akitafuji is produced by Akitafuji Shuzoten in Daisen City, Akita Prefecture, in the heart of the prefecture's largest grain-producing plain fed by the Omono River flowing from Mount Chokai. Founded in 1936, the brewery centers its philosophy on rice-derived umami as the axis of its sake-making, with the goal of producing food-friendly sake that enhances any cuisine without overpowering it.
