Aizu Shuzo, now in its ninth generation of family leadership, has brewed in Minami Aizu, the southernmost and most mountainous subregion of Fukushima Prefecture, for over 330 years. Ultra-soft groundwater drawn from 40 meters below the brewery site, with a hardness as low as 0.8, shapes the house style — smooth, food-compatible, and restrained rather than individualistic. The flagship Aizu label reflects the current brewmaster's conviction that the best sake enhances a meal and lifts a gathering without demanding to be the main attraction.
