Junmai from a Ueda, Nagano brewery that returned to full brewing in 2015, made entirely from locally grown rice by a female toji using small-batch tank fermentation. Clean, smooth, and free of off-flavors, it expresses the house goal of sake that is clear, uncluttered, and easy to drink.
