Ginjo polished to 70% at a Ueda, Nagano brewery that reopened in 2015 after five decades of dormancy, brewed entirely from Nagano-grown rice by a female toji. Small-batch tank fermentation and bottle storage preserve a clean, delicate floral ginjo character with a smooth, refreshing finish.
