Tomio Honjozo Echizentoji is a honjozo sake from Kitagawahonke brewed under the direction of a toji master from the Echizen region, a tradition historically associated with skilled itinerant brewers from Fukui Prefecture. Honjozo classification allows a small addition of distilled alcohol, which in this case is used to enhance aromatic expressiveness and lighten the body. Brewed in Fushimi with the region's soft water, it reflects the technical heritage of Echizen brewing applied to a Kyoto sake context.
