Description

Miyama Nishiki rice polished to 59%, this junmai from Nagano is brewed by the yamahai-oke (wooden barrel) method, a nod to the brewery's name which translates as 'square one' or back to origins. The sake carries a firm, dry character with lively acidity and a clean, brisk finish that reflects the alpine water of Obuse.
