Notoji Junmai Ginjo Sannenkoshu is a three-year aged junmai ginjo from Kuze Shuzo, where extended cellaring softens the ginjo's bright fruitiness into a rounder, more contemplative expression. The aging adds layers of honey, dried stone fruit, and gentle oxidative warmth while retaining the rice purity central to the Choseimai brewing philosophy.

Since 1786, the company has been making its own sake rice (long -time rice) in its own rice field and has been making sake in rice.
The prepared water is used using the spring water (soft water) of the company's groundwater (hard water) and the sacred water "Shimizu".
