Choseimai Tokubetsu Junmaishu from Kuze Shuzo is crafted exclusively from the brewery's own Choseimai rice, a large-grained, white-hearted variety farmed on estate paddies in Ishikawa Prefecture. Hard underground well water at 7.62 degrees of hardness builds a sake with firm structure, savory umami depth, and a clean, dry finish that shines both chilled and at room temperature.
