Daiginjo namazake milled to 40% from Yamada Nishiki, brewed by Hirase Shuzo in Takayama, Gifu, using ultra-soft subterranean water from the Northern Alps at just 15° hardness. Low-temperature fermentation produces a fruity, delicate ginjo aroma with a smooth, lightly dry mouthfeel at sake meter value +4.
