Koganesawa YamahaiJunmaigenshu Hiyaoroshi from Kawakeishouten in Miyagi is an undiluted yamahai junmai released as a hiyaoroshi autumn seasonal sake, pasteurized once in spring and aged through summer before release. The yamahai method adds wild acidity and gamey depth, while the hiyaoroshi aging rounds out the flavors into a rich, mellow, and complex autumn sake.
