Gohyakumangoku and Nippon Bare rice are polished to 60% for this honjozo namazake (unpasteurized honjozo) from Funaki Shuzo in Fukui, bottled as a raw sake to retain the fresh character of new pressing. Brewed with Kuzu River underground water, it offers a clean, approachable style with gentle umami.
