Kitanosho is brewed by Funaki Shuzo, a fifth-generation brewery founded in 1866 in Fukui City, whose family crest of three wild geese inspired the name after the crest of the famous warlord Katsuie Shibata of Kitanosho Castle. Using spring water drawn from 150 meters underground near the Kuzuryu River and locally grown Gohyakumangoku rice, the brewery crafts junmai ginjo sake prized for its refreshing taste and smooth mouthfeel. The lineup also includes sake produced with organic fertilizers and low agricultural chemicals, reflecting a long-standing commitment to clean, honest brewing.
