Kanizumi is an aged daiginjo from Yoshino Shuzo in Chiba, made from Yamada Nishiki polished to 40% and matured in an earthen warehouse. The aging imparts a subtle depth reminiscent of aged rice wine while preserving the structural clarity of the daiginjo style.

It uses clear natural water that springs out of the vast private land, and inherits traditional sake brewing. A regular winner of the Gold Award. Recently famous as a TV location.
